A little detour into the town of Gruyère, Switzerland at the edge of the Swiss Alps,
led us to a cheese factory and castle.
We didn’t end up touring another castle, but we did sample the local cheese and tour the factory.
Ask the kids. They can give you the 411 on how to make Gruyère cheese, beginning with the grass the cow eats, right down to the cheese block’s color, shelf life, and aging process.

I just finished watching Food, Inc. If you haven't seen it. it will give you an appreciation for how food was once made, or apparently is still made in the old country.
